Both Truffles and Bonbons are popular types of chocolate, but their production is quite different.
Truffles traditionally have a ganache centre made from chocolate, cream and butter. Truffles are usually hand rolled and usually finished off with cocoa powder or nuts. Bonbons are moulded chocolate that are usually finished off with stunning cocoa butter finishes. Both are made with high quality ingredients and will provide you with a rich and satisfying treat.
What is a truffle?
Truffles mean different things in many countries but mostly combine dairy cream and butter with melted chocolate and then rolled and coated in cocoa powder or nuts.
Truffles are uneven, rough and are named because of the likeness to the valuable large, round fungus that grows underground.

Nowadays, pre-made truffle shells are readily available and various fillings that cannot be rolled, can be instead pipped into the shell. It is then hand finished with more chocolate and cocoa powder etc. They lose their uneven and fungus likeness when made this way and are more regular in shape.

What is a bonbon?
Because Bonbons are moulded, every piece looks the same. It usually takes longer to make as there is some waiting time for the cocoa butter decoration, shelling, filling and capping to set in-between.

The name in fact originates from the French word “bonbon,” which means “sweet.” They can be made from many different ingredients, but the most common ingredients are confection, nuts, dried fruit, covered in chocolate.
